I waited a year for this book and when it finally arrived i guess i was really disappointed. its a good enough book but i felt like it was an afterthought WECK Home Preserving: Made-from-Scratch Recipes for Water-Bath Canning, Fermenting, Pickling, and More The book almost seems like it was rushed to put out. Some of the recipes forget to mention how much salt to use, and in recipes where salt is the only ingredient other then the veggies, that's pretty important. Weck jars only come in metric units, but ALL the recipes tell you to use Weck quart, pint, cup jars which is annoying and if you're someone who likes accuracy, then you'll probably be frustrated. There is a chart that lists American sizing, but it's up to you to go up a size or down a size since Weck jars don't convert exactly to American size jars. The instructions seem to be geared towards those who already have hot water bath canning experience since the instructions leave out some details for beginners. I like that the recipes are not fussy, pretty basic, and this seems to be the only book I can find recipes for pickled eggs since the USDA does not recommend canning pickled eggs, even though it's not uncommon. Overall, I like the book, but it is not for those new to canning or new to the metric system. I always heard they not safe to use but she shows they are. Thanks! Stephanie is clear and thorough explaining the basics. Full of fun and unique recipes, this book is very inspiring. I can regularly but i was hoping to take it to the next level with fermenting. This book showed me the way. Love all of her canning books!
